1 1/2 c. mashed bananas
2 t. lemon juice
3 c. flour
1 1/2 t. baking soda
1/4 t. salt
2 1/8 c. sugar
3/4 c. butter
3 eggs - too temperature
2 t. vanilla
1 1/2 c. buttermilk

Frosting

1/2 c. butter - softened
1 (8 oz.) cream cheese - softened
3 1/2 c. powdered sugar
1 t. vanilla

Directions:
Directions:
1. Preheat oven to 275 degrees. Grease and flour a 9 X 13 inch pan.

CAKE

2. Mix mashed bananas with lemon juice in a small bowl
3. Mix baking soda, flour, and salt in a medium bowl.
4. Cream sugar and butter in a large bowl until fluffy, about 3-4 minutes.
5. Beat in the eggs, one at a time, then stir in vanilla.
6. Beat in flour mixture and alternate with buttermilk.
7. Stir in banana mixture.
8. Pour into the prepared pan.
9. Bake in preheated oven and cook for 1 hour.
10. Remove the cake from the oven and place it directly into the freezer for 45 minutes. This will make the cake very moist.

FROSTING

1. Cream butter with cream chese until smooth.
2. Beat in vanilla.
3. Add confectioners sugar and beat on low speed until combined, then high to make frosting smooth.
3. Spread on cooled cake.

This is a great recipe to use up those over ripe bananas and the cake will freeze very well. ( minus the frosting)
