• 1 package yellow cake mix
• 2 – 11 oz. can mandarin oranges, save juice for one can
• 4 large eggs
• ¼ cup vegetable oil
• 1 – 16 oz. package Cool Whip, thawed
• 1 – 15 oz. can crushed pineapple, drained
• 1 – 3.5 oz. box instant vanilla pudding mix

Preheat oven to 350 degrees. Prepare the cake by mixing the cake mix, 1 can of oranges with juice, eggs, and oil. Pour batter into 3 greased and floured 8” round pans, or a 9”x13” cake pan. Bake until toothpick inserted into centers comes out clean, about 25-30 minutes (maybe a few minutes longer if using 9”x13” pan. Cool completely on wire rack.
For frosting, mix together Cool Whip, crushed pineapple, 1 can of mandarin oranges that has been drained, and instant vanilla pudding mix. Frost completely cooled cakes and refrigerate.
