Sweet potato gnocchi Recipe

2 Medium sweet potatoes*
2 cups AP flour, + ½ cup for rolling out
2 tsp salt

Directions:

Bake sweet potatoes at 400º for 40 minutes, or until tender, set aside to cool.

Combine salt and flour. Pour onto surface and make a well in the center.

Place cooled sweet potatoes in a ricer, right onto flour.

Flour your hands and begin working sweet potatoes into flour, adding more as necessary. This may take 10 or 15 minutes, working with hands to a smooth ball.

Divide dough into thirds. Roll each into long snake about ½ " thick, flouring as necessary to prevent sticking. Cut each into 1" pieces and place on cookie sheet(s). Press grooves on gnocchi with fork or gnocchi board. Cover if not to be used right away.

Heat a pot of salted water to boiling. Add the gnocchi and let cook. Add about 10-12 per batch to boil. Once they float to the top, continue boil for 30 seconds. Remove with slotted spoon.

*you actually use red garnet yams which are the orange fleshed "sweet potatoes". It makes them so pretty.

Robin makes these with sauteed lacinato kale.

Try with reconstituted morels, also sauteed.

Sage leaves and brown butter is another option.
