frozen breaded cauliflower

frozen cauliflower
1/2 c.+ 2 T. olive oil, divided
1 T. taco seasoning
2 t. paprika
1/4 t. salt

3/4 c. chopped onion
1/3 c. chopped red peppers
1/3 c. chopped green or yellow peppers
salt
garlic powder

lite-honey mustard dressing

Directions:
Directions:
Preheat oven to 425º.
Bake breaded cauliflower and¼ set aside.
Toss frozen plain cauliflower with 1/2 c. oil and spices.
Transfer to baking sheet and bake for 20 minutes.
Stir and return to oven for another 12 minutes.
Meanwhile, mix onions and peppers with 2 T. oil and spices and sautê until soft, about 20 minutes.

To assemble:
Layer the breaded cauliflower on the plate.
Place the baked cauliflower on top.
Then, place the sauted vegetables on top.
Drizzle the honey mustard dressing over everything.

**To make your own taco seasoning: mix 1 T. chili powder, ½ T. cumin, ½ t. sugar, ½ t. onion powder, ½ t. garlic powder, ¼ t. red pepper flakes, ½ t. salt and a pinch of cayenne pepper. Use 1 T. for this recipe. Store the rest in a jar.
