1 lb ground beef
1 medium onion, finely chopped
2 cloves garlic
1/2 tsp salt
2 Tbsp chili powder
1 tsp oregano
1 tsp cumin
1 tsp red pepper flakes (optional)
1 can diced tomatoes
1 can tomato sauce
1 can beans of choice

Directions:
Directions:
Heat dutch oven. Add a tbsp olive oil and sauce onions until soft. Add garlic and mix together. Add ground beef and brown. Drain fat from pan and return browned ground beef to pot. Add remaining ingredients and bring to a boil. Reduce heat and simmer- watching to make sure chili doesn't dry out. Add water if necessary.

Taste and adjust seasonings as needed.

Chili is my most requested food in cool weather. I serve with corn bread. John David loves his with oyster crackers. It's a meal that is as good, if not better as a leftover!
