1 1/2 pounds of Gruyère cheese
3/4 pound Raclette cheese
1/4 cup of apple juice
1 1/2 to 2 teaspoons fresh lemon juice
5 teaspoons of cornstarch, more if needed while cooking
1 3/4 cups of white wine
3 or 4 turns of the pepper mill

Directions:
Note the goal is to have about 2 pounds of cheese after you trim the rind. Mix 2 different kinds of cheeses.
Grate cheeses, add wine, apple juice, lemon juice and corn starch and heat until melted. Serve with crusty bread or fruit.
