2 cups of rice
3 cups of chicken stock
1 pounds of cooked shrimp or salad shrimp
1 1/2 cups of chopped walnuts
1 bunch of chopped scallions
2 bunches of radishes, chopped
1/2 red pepper cut into small squares
2 tablespoons of fresh parsley

Dressing
4 tablespoons of lemon juice
1/2 cup of olive oil and 1/2 cup vegetable oil
1 tablespoon of lemon zest, salt and pepper

Directions:
Directions:
Cook the rice in the chicken broth until all the broth is absorbed. Fluff and let cool.
Combine all the ingredients for the dressing in a jar and shake to combine. Combine the cooled cooked rice and cooked and cooled shrimp and all the remaining ingredients in a large salad bowl. Toss with the lemon dressing salt and pepper to taste. Serve on a bed of lettuce.
