Filipino BBQ Pork Skewers Recipe

2-3 lbs pork shoulder, pork belly, or pork butt, cut into 2-inch lengths or long strips (if you wish it to be just one long piece of meat per skewer)


MARINADE

2 cups sprite or 7 Up
1/2 cup soy sauce
1/4 cup calamansi lime (no clue what this is or where to find it) or lemon juice
2 tablespoons oyster sauce
1 tablespoon fish sauce (you can increase the salt content if you don't have fish sauce but use it if you can because it adds depth of flavor to the barbecue)
1 whole garlic, peeled and crushed
3 tablespoons brown sugar
1 teaspoon salt

BASTING SAUCE
1 cup ketchup (banana ketchup if you can find it, but you won't so just use Heinz)
3-4 tablespoons sugar, or to taste
1/2 tablespoon oil

Bamboo skewers, soaked in water for at least 30 minutes

1.) Combine marinade ingredients and mix until sugar is dissolved and marinade is well blended
2.) Add pork to marinade and cover with film, marinade overnight
3.) Preheat grill to a high heat
4.) Put pork onto skewers
5.) Make basting sauce
6.) Grill for 10 minutes, rotating every 2 minutes. Until cooked and charred nicely
7.) Baste with Basting sauce and grill for 1 more minute, rotate and baste other side, grill for additional minute. Sauce should carmelize on all sides.

I am adding this recipe for myself more than anyone else. A guy I used to work with brought us pork belly skewers one time. They were so good, but he wouldn't share the recipe. I have searched and tried recreating it for almost 10 years now, and I finally found it. Screw you Ryan Lachica!
