3 cups of sugar
2/3 cup of cocoa ( Hersey’s but even greater Laduree from Paris)
1 1/2 cup of milk or evaporated milk
1/8 teaspoon of salt
1/2 stick of butter
1 teaspoon of vanilla

Directions:
Directions:
Put all ingredients in a heavy bottomed pan except for the butter and vanilla. Put on medium heat and stir with a wooden spoon.keep stirring until the contents come to a boil. The fudge must come to a temperature of 240º or the soft ball stage, the method I use. This is how to do that. Have a small bowl or cup of ice water handy. When the slow boiling fudge seems to be getting to the right temperature you let the spoon drip over the ice water. If the fudge is ready when these drips from the spoon fall into the ice water they will form a ball at the bottom of the container. If you can pick the ball up from the water and it is very soft it is done. Boiling too much would form a very hard ball and it is over done . Forming no ball at all and it is not done! At the soft ball stage remove pan from heat and drop the butter and vanilla in without stirring. Let the butter melt and the fudge cool but not refrigerate. Then again use the wooden spoon to stir the fudge which is very shiny. Stirring rapidly the fudge will start losing its gloss and thicken. Then quickly empty the contents into a buttered 8”x 8” fudge pan. When hard enough to cut, cut into squares and serve or store in an air tight container.

There is nothing like old fashioned chocolate fudge! My mom and all her sisters made it all the time. I am so glad it was handed down to me and now to you! It’s delicious!
