1 good sized (3 lb) squash or baking pumpkin (a cinderella pumpkin, Kubocha squash, or large pie pumpkin work well)
1 loaf sour dough bread, a couple days old
1 carton Heavy Cream
.25 lb Gruyere or other similar cheese, shredded
.25 lb Gorgonzola or other blue cheese, crumbled
10oz bag frozen mixed mushrooms or a mix of flavorful, sturdy mushrooms (Crimini is fine, a mix with some shitake and King oyster is even better).
Sundried tomatoes (optional)
2-3 garlic cloves
Fresh thyme
nutmeg
salt and pepper

Scoop out pumpkin or squash like it's halloween
Cut or tear bread into aprox 1" cubes. allow to dry out or pop in oven to lightly toast
Mix everything in a bowl, stuff in to pumpkin, cover with pumpkin lid
Bake on sheet tray at 425 ish until pumpkin flesh can be easily pierced with knife

Should be bubbly and delicious.

To serve, use big spoon to scoop out pumpkin flesh and filling. You can also side pumpkin into pie wedges and top with filling but I like the whole pumpkin better. Be sure to really scoop the sides though!

This is a heavily revised version of Dorie Greenspan's "Pumpkin stuffed with everything nice". I used to listen to the NPR show "Splendid Table" while putzing in the kitchen and she was on as a guest for holiday episode. I've made variations with rice for gluen free friends, I've made casserole version of this when I couldn't find a pumpkin big enough to stuff (just plop it all in a bakign dish and cover with bread crumbs and cheese. A great vegetarian holiday dish that feels festive and fun.
