1/2 lb. ground beef - brown and drain
3/4 c. chopped onion
3/4 c. carrots
3/4 c. celery chopped
1 t. basil
4 T. margarine
3 c. chicken broth
4 c. diced potatoes
1/4 c. flour
8 oz. american cheese
1 1/2 c. skim milk
3/4 t. salt
dash pepper

Brown and drain beef. In large pot melt 1 T. margarine and add onions, carrots, celery, and basil. Saute for 10 minutes. Add cooked beef, chicken broth and diced potatoes. Cook 10 more minutes. In a separate pan melt 3 T. margarine add flour to make thickening agent. Stir into soup and then add cheese, milk, salt and pepper. Cook another 20 minutes til cheese is melted and potatoes are tender.
