Ingredients: 2 cups of sliced rhubarb 2 cups of fresh strawberries 1/4 cup of Minute Tapioca 1 1/4 cups of sugar 1 teaspoon of orange zest Fresh grated nutmeg to taste A little mixture of flour and sugar sprinkled on the bottom the the unbaked pie crust before adding filling Butter to dot the top

Directions:After I roll out the chilled pastry and put in the glazed pottery pie dish I sprinkle a little flour and sugar on the bottom before I add the rhubarb strawberry filling. I dot the top of the filling with butter before rolling and adding the top crust or weaving the pastry to make the lattice top. Bake in a preheated 400º oven about 45- 50minutes or until the filling bubbles and burst slowly. Remove and cool completely before cutting. |

Notes: You can vary the amount of rhubarb and strawberries according to how much fresh of both you can get. I usually have about 3 cups of rhubarb and less strawberries. Think ahead and freeze some rhubarb when it is in season for a fabulous pie in the winter!
