8 cups of potatoes, diced
1 package of mixed vegetables or 2 cups any vegetable you like
2 packages of smoked sausage, sliced in ½ inch rounds
salt and pepper, to taste (I use Special Shit by Big Cock Ranch seasonings)
olive oil

Directions:
Directions:
1. Preheat oven to 375º.

2. Dice up potatoes. Add to a large mixing bowl and add in the vegetables. Drizzle with olive oil and seasonings. Toss to coat evenly.

3. Line a 9x13 dish with aluminum foil. Pour the potato mixture into dish. Put in oven and cook for 30 minutes.

4. While the potatoes are cooking slice up the smoked sausage into ½ inch rounds or you can do half moons.

5. When you take the potatoes and veggies out stir in half the smoked sausage and put the other half on top. Put back in oven for an additional 25 minutes or until the potatoes are tender and the smoked sausage is cooked.
