1 c Rice, uncooked
1/4 c plus 2 T cooking oil, divided
1 bag, about 10 oz., frozen mixed vegetables
2 Eggs
1/2 c pre-cooked chicken, chopped
1 t garlic salt
1/4 t Black Pepper
Soy sauce, for serving

Directions:

Cook rice in 2 c water in a saucepan.
Heat the 1/4 c cooking oil in a skillet. Add the vege's and stir fry until just tender. Scrape vege's to side of skillet. Add the remaining oil to open area. Crack eggs into oil and scramble. When eggs are fully scrambled, stir in the vege's, cooked rice, chicken and seasonings. Stirring constantly, heat until golden brown and chicken is thoroughly heated to a safe internal temp of 165º. Add soy sauce.
