25 pounds of pork ground course
5 pounds of beef or veal ground fine
9 ounces of salt
1 3/4 ounces of pepper
2 ounces of garlic grated fine

Directions:

MIX with one quart of water . Mix with hands until it sticks to the pan. Mix, mix, mix! Very important to mix well!
Stuff in beef or hog casings. Smoke for 5 hours slowly for fresh kielbasa boil slowly for 25 minutes.

As you can see mixing is the key to his fabulous kielbasa! His store in Plymouth, Rudeski Meats, was famous for his home made kielbasa.
