1 gallon cleaned dandelion blossoms
3 pounds sugar
3 lemons, juiced

Directions:
To each gallon of cleaned blossoms add one gallon of boiling water. Use as many gallons as your crock allows, filling it to within inch of the top. Let stand for 24 hours and then strain. Return juice to crock, adding sugar and the juice of three lemons for each gallon of blossom juice. Allow to ferment thoroughly for 4-5 days, covering with cloth to keep pests out. Bottle but leave uncorked for awhile to let any fermentation rise and be poured out before corking. After corking tightly, the wine will be ready in about 3 months.

Pick blossoms when young and tender, usually around Mothers Day.
During Prohibition Martin’s wine was very popular in Pocono Pines. He also made a great “ bath tub gin” but somehow that recipe has been lost!
