2 1/4 c 1lb Du Puy lentils
1 med red onion dice
1 c dried currants
1/3 c capers

Vinaigrette
1/3 c olive oil
1/4 c ACV
1 T maple syrup
1 T Dijon
2 t salt
2 t pepper
1 t cumin
1/2 t coriander
1/2 t tumeric
1/2 t cardamom
1/4 t cayenne
1/4 t cloves ground
1/4 t ground nutmeg
1/4 t cinnamon

Optional add ins
Arugula
Walnuts
Goat cheese
Fresh herbs parsley,cilantro,basil,mint
Sprouts
Roasted seasonal veggies

Directions:
Directions:
Rinse lentils. Put in pot and cover 3-4 in, bring to boil, reduce to simmer. Check for doneness about 20 min. Don’t overcook.
Make the vinaigrette and shake well.
Fine dice onion. Chop currants and capers.
Drain lentils and rinse with cool water. Add to large bowl and toss with dressing. Add other ingredients.
