2 leeks
1 large or 2 small yellow onions
4 T olive oil
20 large garlic cloves, peeled & crushed
4 C chicken stock
4 C water
salt & pepper
8 slices French bread
2 T. olive oil
garlic powder
2 C. whole milk
2 lbs. baking potatoes, peeled & cut into pieces
Directions:
Directions:
Preheat oven to 400º. Trim the leeks, wash well, and
cut into 1 in. pieces. Peel & coarsely chop the onion. Heat 4
T. olive oil in a large saucepan. When hot, add the leeks,
onion and garlic and saute for 6-10 minutes until tender and
slightly browned. Add the chicken stock, water, potatoes and
seasonings. Bring to a boil. Cover, reduce the heat to low
and boil gently for about 25 minutes.
Cut the french bread into 1/2 in. squares. Moisten with 2 T.
olive oil, sprinkle with garlic powder and spread them on a
cookie sheet. Bake at 400º for 8-12 minutes until nicely
browned.
When the soup is cooked and the potatoes are tender, strain
it through a sieve, retaining the liquid. Place the solids in the
bowl of a food processor and process until smooth. Return to
the saucepan with the reserved liquid and add the milk. Bring
to a boil and serve with the croutons.
