Cleaned Head of Hog, heart, tail, and ears
salt and pepper
½ lemon juiced
(some prefer vinegar, optional)

Directions:
Directions:
Boil hog head, heart, ears and tail until tender and meat falls off bone. Reserve the meat. Remove excess fat. Reheat meat, and broth adding seasonings and lemon juice leaving the gelatin to form a loaf. Pour ingredients into a loaf pan lined with wax paper. Refrigerate. Remove block of gelatin pork meat. This is called head cheese. Keep wrapped with wax paper and refrigerated. This was especially made during poor harvest times and the depression. They say, "they used everything of a hog except the squeal."

I remember my mother, LaVeta Lewis, making this when I was a young child. She loved it. She grew up on it, so to say.
