1 small head of cabbage, shredded
1 pound ground beef, round or chuck
1 medium onion, chopped
1 c. cooked rice
1-1/2 cans condensed tomato soup (about 2 c.)
1/2 pound mushrooms, chopped
2 tbsp. butter
1 clove garlic, minced
1 tsp. salt
dash of pepper
chicken broth as needed

Directions:

In large skillet, lightly brown onion in butter. Add garlic, mushrooms, beef, rice, salt and pepper. Brown beef until no pink meat shows-it will be cooked further in casserole. Mix in shredded cabbage, then tomato soup. Put into 2-quart casserole and cover. Bake at 350 degrees for 30 minutes or so. If mixture becomes too dry, add chicken broth to moisten. Serve with mashed potatoes and gravy.
