Chicken Fried Rice Recipe

4 t. Vegetable oil, divided
3/4 lb. Boneless, Skinless Chicken Breast, cut into 1/2 in. pieces
1/2 c. Onion, finely chopped
1/2 c. Carrots, peeled, quartered and sliced
2 t. minced garlinc
2 eggs, lightly beaten
3 c. cooked white rice
3 T. Soy Sauce, low sodium
1 T. Toasted Sesame Oil
1/4 c. green onions, sliced
Salt and pepper to taste

Heat 2 t. of oil in a large pan over medium high heat. Season the chicken pieces with salt and pepper to taste. Place the chicken in a single layer in the pan. Cook for 4 - 5 min. or until chicken is browned and cooked. Remove the chicken from the pan and cover with foil. Add 2 t. of oil to pan, along with onions and carrots. Cook for 4 - 5 min. or until veggies ore softened. Add garlic and cook for 30 seconds. Remove vegies and cover with foil. Pour t. of oil in pan. Add eggs and cook, stirring occasionally and break up until scrambled. Add salt and pepper. Add rice, chicken and cooked vegies to pan. Stir in soy sauce and sesame oil; mix until warmed, 3 or 4 min. Sprinkle green onions over top.
