1/2 cup sugar
1/3 flour
3/4 cup butter melted
1/2 teaspoon cinnamon

2 cups of flour sifted
3 teaspoons of baking powder sifted
1/3 cup shortening melted
3 tablespoons of sugar
1 egg, beaten
1 cup of milk
3/4 teaspoon of salt
1 cup of huckleberries

Directions:
Directions:
In a small bowl combine the first four ingredients for the muffin topping and set aside. Sift together: flour, baking powder, salt and then add sugar. Add the slightly beaten egg, milk and melted shortening. Finally add a cup of wild huckleberries from Tobyhanna if you are lucky! Domestic blueberries will do in a pinch. Gently stir in the berries so that you don’t crush them. Spoon into paper cups in muffin tin and sprinkle with the topping on each.
Bake in preheated 400º oven for 20-25 minutes.

Uncle Bill Monahan and Mimi wouldn’t come out of the woods in Tobyhanna until Mimi picked a full bucket of huckleberries for pies and muffins. Pop Pop hated to pick because he had to pick when he was a little boy and sell them. Bonnie when she was little liked to sit under a bush and eat half of hers. Uncle Bill made us cans out of old coffee cans but Mimi always filled a water bucket!
