2 pounds bacon cut into 1 inch pieces, cooked until crispy, remove bacon and place on paper towel to drain. Save bacon grease in same skillet bacon cooked in.
4 bunch green onions sliced into small pieces
4 heads of assorted leafy lettuce, red and green. Remove leaves from root head, wash, and dry leaves, tear or cut into large bite size pieces.
½ to 1 cup apple vinegar
bacon grease
2-4 Tablespoons cooking oil
salt and pepper to taste

Only make as much of salad as you will eat. It will not keep long after preparing.
Place torn lettuce into large bowl, my mother, LaVeta Lewis would use her largest popcorn bowl. Add green sliced onions, cooled bacon pieces and toss. Keep bacon grease in the same skillet you cooked the bacon in, maintain low heat and add the vinegar stirring to deglaze skillet. This will steam up (be careful). Pour hot bacon grease/vinegar dressing over the lettuce. Sprinkle with salt and pepper. Toss to coat lettuce leaves. Serve immediately.
More or less dressing can be made just adjust amounts.

This was a family favorite. Where my mother learned how to make this, I don't know. This recipe dates back to Europe first century. When mom made this for our family dinners she would use 4 bunches of leafy lettuce, 2 bunches of green onions and 2 pounds of bacon. It was delicious.
