3 cups unbleached flour
1 cup rye flour
2½ teaspoons salt
½ teaspoon instant yeast
1½ cups cool water
¾ cup dried cherries or cranberries (I used Cherries)
½ cup chocolate chips
½ cup white chocolate chips
1½ cups chopped toasted Walnuts or Pecans (I used Walnuts)

Directions:
Directions:
Mix flours, salt, yeast and water in a large bowl. Dough will be soft. Stretch dough into rectangle, place cherries, and white and chocolate chips plus walnuts over dough. Press fruit and nuts into dough. Fold over and place in large bowl. Cover with plastic wrap. Let rest overnight or 12 hours. Pour dough out on slightly floured surface folding over a few times. Let rest 15 minutes. Place dough on parchment paper smooth side down. Cover and let rise 2 hours. During last 30 minutes preheat oven to 450º. Place cast iron Dutch oven with lid in the oven while the oven heats. When the dough has risen 2 hours, remove the Dutch oven and lid. Place the risen dough on parchment into the hot Dutch oven and cover with lid. Place pot back in the oven and bake 20 minutes. Remove lid and bake another 20 minutes for light brown or using digital thermometer 205º.
