3 egg yolks
½ cup brown sugar
1 cup heavy cream
1 cup pumpkin puree
½ teaspoon allspice
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 pinch salt
½ cup sugar

Directions:
Directions:
Preheat oven to 325º.
Whisk egg yolks and brown sugar together in a large bowl. Stir in cream, pumpkin puree, spices and salt. Divide mixture into 6 ramekins. Filling to half full of water place ramekins in the baking dish. Bake for 30-35 minutes. Remove ramekins and place in refrigerator for at least 2 hours. Sprinkle with 1 Tablespoon of sugar each. Melt the sugar with a torch or under a broiler until sugar is crisp and dark brown. Allow to cool and serve.
