1 clove garlic split in half
1/4 c. olive oil
1 chopped onion
1 chopped green pepper
1/2 lb. ground beef
1/4 lb. ground pork
1/4 lb. ground veal
1/2 lb. Italian sausage
2 1/2 cups Italian tomatoes (canned, pear shaped)
1 can tomato paste (6 oz.)
1/2 cup dry red wine (burgundy)
1/4 t. oregano (or more according to taste)
salt and pepper

Directions:
Directions:
Sauté garlic in olive oil until golden--discard.
In same oil, sauté onion and green pepper until onion is golden brown.
Add meat and brown, separately with a fork as it cooks.
In another pan, bring tomatoes and tomato paste to a boil over low heat.
Add meat mixture, wine and seasonings.
Simmer for 2 hours, stirring occasionally (may add water).

Serve with vermicelli spaghetti.

I got this recipe from a friend when I taught at Warren High School. She got it from an Italian cookbook. It became Dave's absolute favorite dish which he didn't get very often because it took such specialized ingredients and such a long time to cook.
