1/2 c ACV
1 T sugar or maple syrup or honey
1 1/2 t kosher salt
1 red onion thin sliced

Optional thyme or oregano sprigs

Directions:
Directions:
Whisk first 3 ingredients and 1 c water in small bowl until sugar and salt dissolve. Place onion in a jar; pour vinegar mixture over. Let sit at room temp for an hour. Then fridge.
Can keep several weeks in fridge.
