½ cup cooking oil
2 cups Monterey Jack Cheese
¾ cup chopped onion
¼ cup butter
¼ cup plus 2 teaspoons flour
2 cups chicken broth
1 cup sour cream
1 chicken boiled and deboned
Jalapeno's to taste
1 dozen corn tortillas

Directions:
Directions:
Melt butter in medium saucepan. Blend flour. Add chicken broth, stirring constantly until mixture thickens and bubbles. Stir in sour cream and peppers.. Cook until heated. Do not boil. To make enchiladas: Heat oil in skillet. Quickly soften tortillas in oil, turning once. Drain on paper towels. Roll enchiladas with onions; chopped chicken and cheese. Pour some sauce in the bottom of an oblong baking dish. Place rolled tortillas in the dish. Cover with the remainder of the sauce. Bake at 425º for about 25 minutes or until the sauce bubbles.
