Chocolate Cookies


Ingredients:

1 cup Crisco shortening
2 cup sugar
2 large eggs
1 cup buttermilk
2 teaspoon vanilla extract
4 cup all-purpose flour
1 cup cocoa powder (sifted)
1½ teaspoon salt
1 cup hot water
2 teaspoon baking soda

Directions:
Directions:
1. Preheat oven to 350°.
2. In a mixing bowl, with the paddle attachment, cream shortening and sugar until light and fluffy.
3. Add the eggs and mix well.
4. Add the buttermilk and vanilla. Mix again.
5. Add the flour, sifted cocoa powder, and salt. Mix only to combine.
6. Add the baking soda to the hot water and stir to dissolve. Slowly mix this into the batter until combined.
7. Drop by cookie scoop or spoonfuls onto a greased baking tray.
Bake for about 9 - 10 minutes. (When finished, cookies will spring back when lightly touched.)
8. Remove to a wire rack to cool.
9. In the meantime, make the filling.
10. Pair the cooled cookies and spread the filling between the two cookies.
11. Wrap each individual whoopie pie in plastic wrap.
12. Whoopie pies that won't be eaten within the first few days can be stored in an airtight container in the freezer to keep them fresh. Remove from the freezer to thaw at least a half-hour before serving.

4 cup powdered sugar
4 Tablespoons all-purpose flour
2 Tablespoons milk
1 Tablespoon vanilla extract
⅛ teaspoon salt

1. With the whisk attachment, beat egg whites until foamy.
2. Add the remaining ingredients and mix.
3. Whip on high speed until the filling is light and fluffy.
