1 1/4 cups plus 2 tbsp flour
1/2 cup butter
2 cups plus 2 tbsp sugar
1/4 tsp salt
4 eggs separated
1/3 cup light cream or half and half
4 cups of Rhubarb

Directions:
Directions:
Mix 1 1/4 cup flour, butter, 2 tbsp sugar, and salt
Press into 9 X 13 inch pan
Bake for 15 minutes
Filling:
Beat egg yolks, mix in 1 1/2 cup sugar and 2 tsp flour.
Add to egg yolks
Add the cream and rhubarb
Spread on baked crust
Bake at 350º for 40 minutes
Allow to cool
Beat egg whites until foamy
Add 1/2 cup sugar
Spread on top
Return to over for 10 minutes until brown
