2 cups shredded zuchini
2 eggs -beaten-
5 T. pancake mix
1/4 c. Shredded cheese
Directions:
Directions:
Drop by spoonfuls on to hot butter. Brown on both sides as you would pancakes.
Serve with sour cream and salsa.
