- 8 oz margerine
- 8 oz caster sugar
- Eggs X4
- 1 tsp of vinilla essence
- Lemon
- 8 oz self raising flour

Directions:
Directions:
1. Cream the margerine with the caster sugar
2. Beat the eggs with the vanilla extract
3. Add the self raising flour with the egg mixture to the the margerine and sugar and mix well
4. Add the rind of the lemon and the juice of the lemon and mix well
5. Cook for 23-25 mins at 170 Fan
