Cheesy Crustless Quiche Lorraine Recipe

Ingredients: 8 slices bacon ½ cup sliced green onions (white part preferred) 1½ cups grated Swiss cheese ½ cup grated Mozzarella cheese ¼ cup coarsely grated Parmesan cheese fresh ground black pepper to taste ¼ tsp *Spike Seasoning, see notes or use another seasoning blend that is good with eggs ⅛ tsp Cayenne Pepper, optional 8 eggs ¾ cup half and half 2 tbsp diagonally sliced green onion for garnish (green part preferred)

Directions:1. Preheat oven to 350º. Spray a 9-10 inch pie dish with nonstick spray.
2. Cook bacon using your preferred method until it's very crisp; then blot away as much fat as you can and crumble the bacon.
3. Slice green onions and grate cheese.
4. In the pie dish layer the bacon, green onions, Swiss cheese, Mozzarella cheese, and Parmesan cheese. Season with ground pepper, Spike seasoning, and Cayenne Pepper.
5. Beat the eggs until the yokes and whites are completely combined, then whisk in the half and half.
6. Pour the egg mixture over the other ingredients; then use a fork to gently stir so all ingredients are combined.
7. Bake 45 minutes or until the center is firm and the top is browned to your liking. The quiche will puff up as it cooks, but when it cools slightly it will sink down into the dense custardy consistency.
8. Serve warm, garnished with green onions if desired.
9. This will keep in the refrigerator for several days and can be reheated in the microwave. |

Notes: *If you don't have the Spike seasoning, I have made this recipe without any extra seasoning and it is still really good.
You can also add a pie crust to this recipe if you prefer one.
If you want to cut the calories, just use plain milk instead of half and half, reduced fat cheese and turkey bacon.
This is the recipe I would always make when I went to Santa Rosa Beach with my best friends Cindy and Sandra. It seemed like I was always trying to watch my carb intake, this recipe always satisfied and I never missed the crust at all.
