1 can white corn (drained and rinsed )
3 tbsp light mayonnaise (I prefer Hellman’s)
1/4 cup chopped scallions
1/4 cup diced tomatoes
salt and pepper to taste

Directions:
Directions:
Drain the corn and rinse under cold water
Add to a mixing bowl and add in the mayo, scallions, tomatoes, salt and pepper
Mix well. This tastes even better after sitting in the fridge for a bit but can be eaten immediately!

I love salads. I think they remind me of when I was young, going to country school and the end of year pot lucks we always had with the other families. We played baseball in the corner of Boettcher's field and we had a huge spread of yummy food to share with everyone, right in front of the school, Clover Cove. Some salads take a bit of prep, but this one, with canned corn, is fast, simple, and delicious. You could spice it up with Cajun seasoning, a little red pepper, or ranch dressing mix. But I like it just like this.
