6 T olive oil
3 lbs. Lean boneless pork cut into 1-2" cubes
1 lg. onion minced
2-4 cloves garlic minced
1-2 yellow pepper diced
1 14 oz. can beef (or other) broth
2/3 C (cream) sherry
1 14 1/2 oz. can stewed tomatoes
5 T chili powder
1 tsp dried oregano
1 T cumin
1 T brown sugar
Cayenne pepper to taste
S3a salt to taste
2 C pumpkin puree
2-5 C black beans
Shredded cheddar
Toasted pumpkin seeds

Heat 2 T oil in a large pot, brown pork over medium high heat. Once browned, reserve. Add onion, garlic, and pepper to the pot and sauté 5-10 minutes. Stir in broth, sherry, and tomatoes.
Add spices, cayenne and salt to taste. Stir well. Add pumpkin and stir until smooth. Add black beans, and browned pork. Bring to simmer, stirring occasionally for 45-60 minutes. Garnish with cheddar and pumpkin seeds.
