Sicilian Salmon Recipe

3-4 serving size of Salmon
1/2 c olive oil
1 can diced tomatoes
1 8 oz can chopped black olives
2 T capers
2 T minced oregano
2 cloves garlic minced
Kosher salt and freshly ground pepper
1 whole lemon

Serve with Rice Pilaf

bag up the fish.

bag up in a quart size baggie all the other ingredients except whole lemon. Put both bags and the whole lemon in one gallon size bag with a bag of rice pilaf.

freeze.

Thaw in frig.

Start the rice cooking

Preheat the oven to 375º in a ceramic baking dish, arrange the fish with space between the fillets and brush generously with the olive oil. Season with Kosher salt and freshly ground pepper. Slice lemons and place under the salmon skin side down. Bake for about 15 minutes.

While the salmon is baking, Heat the tomato mixture in a saucepan for 5 minutes. Place the salmon into the mixture. Spoon the sauce over the fish and heat until the Salmon reaches an internal temperature of 115º -120º about 5 minutes.

This recipe was inspired by the cooking classes and recipes from our 2023 cruise from Istanbul to Portugal which stopped in Sicily too. I love collecting recipes from our travels as souvenirs. I can remember our trip every time I take a bite.
