1 whole egg
1 teaspoon mustard
1/2 teaspoon salt
2 teaspoons lemon juice
1 clove garlic optional
1 teaspoon fresh herbs optional
2 tablespoons brine from fermented kombucha sauerkraut whey etc.
1 1/4 cups oil - avocado, grape seed or olive oil


Directions:
Directions:
add all ingredients into mason jar and allow oil to separate for a few seconds
place immersion blender all the way to the bottom - keeping perpendicular and at the bottom of jar
blend until the colour turns an opaque white
once bottom is white - slowly lift immersion blender up and down to incorporate the rest of the oil
Taste and adjust to taste
cover jar and leave it out on the counter at room temp for 6-10 hours to ferment
transfer to fridge and use like regular mayo
