1/4 ounce package Dry Yeast
2 cups lukewarm water
1 1/4 tablespoon salt
1 tablespoon sugar
6-7 cups bread flour

Directions:
Directions:
Dissolve the yeast in the water (105-115º)
Stir in the sugar and salt, stirring thoroughly. Let rest covered, until bubbly
Add flour one cup at a time to an electric mixer bowl using a dough hook at low speed
Add enough flour to make a stiff dough
Turn onto table and knead until you reach a smooth elastic dough
Cover with a towel and place in a warm place until doubled in bulk
Turn dough onto a lightly floured board and shape into two loaves, round or oblong
Arrange onto a baking sheet, heavily sprinkled with cornmeal and allow to rise for five minutes
Slash the tops of the loaves in 2 or 3 places
Brush the loaves with water and place in a cold oven
Set the oven control at 400º and place a pan of boiling water on the bottom of the oven
Bake the loaves until they are crusty and done for about 40-45 minutes. Check bottom of loaves and tap, the should sound hallow
