10oz plain flour
5oz butter or margarine
40z sugar
½ teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoonground cloves
425 grams of tinned pumpkin (you can buy a pumpkin, scoop out the flesh then boil it then puree it - but honestly I'd just use a tin!)
vanilla essence
2 eggs
8fl oz single cream

1.Grease a 9" pie dish.
2.Make pastry. Remember you can make a double batch and freeze half to save time on another recipe like quiche..
2.Rub fat into flour untl it resembles fine breadcrums then add 2 tablespoons of cold water and combine until it's soft like playdough. Add morewater if necessary but don't make it soggy.
You can do all this in a food processor or even buy ready made pastry.
3.Roll out and line the dish. Flute the edges and pick the botom all over with a fork.
4.Bake it at 150º for about 10 minutes - it shouldn't be cooked or brown.
5. Remove from the oven and put it on a baking tray to prevent spillage when it next goes in with the liquifd ingredients.
6.The next bit is easy if you have a food mixer. Just put everything else in and mix round thoroughly until smooth. Or simply beat the eggs then mix in everything else by hand.
7. Pour it into the pie crust and return to the oven for about 30 minutes or until it is firm in the middle.
