5 qt. tomatoes, peeled and cut up
8 large sweet green peppers, chopped
2 qt. onions, chopped
4 medium carrots, peeled and shredded
5-8 jalapeno peppers
2 cans chopped green chilies
1 c. vinegar
1/4 c. sugar
1/4 c. salt
3 tsp. garlic powder

Directions:

Blend jalapenos with vinegar in blender. Put all the ingredients together in a large pot. Simmer until thick. (Or you can thicken with flour and water paste. I don't think I have ever used flour for thickening. I just cook it until it's thick.) Send through blender, if desired. Put in jars and seal.

*I use fresh garlic instead of garlic powder.
*I also add chili powder and cumin to taste.
*Carrots are optional. (I opted not to put them in this year-2023- and it turned out just fine.)
*I totally forgot to add the green chilis this year-2023. It still tastes amazing!
*I added a big bunch of fresh cilantro to the salsa this year-2023. Even more tasty than usual. :) :)
