Ingredients: For my growing family, I usually use 2 pounds of meat and double all the ingredients!!
1 pound lean ground beef (uncooked obviously) 1/8 tsp (or a dusting) of garlic powder 1 small onion (finely chopped---we don't love onions in this family so we don't always use it and the taste is just as delicious without) bread crumbs (usually about 1 cup or a little less) 1/4 cup milk 2 tsp Worcestershire sauce 1/4 tsp (or a dusting) of salt 1/4 teaspoon mustard (it calls for ground dry mustard but I never have that) 1/8 tsp pepper 1 egg 1/3 cup ketchup or barbecue sauce (I have used either and both taste good) It says to put this on AFTER the meatloaf has cooked, but sometimes I put it IN THE MEATLOAF before I cook and then again when it's finished and it's good both ways!

Directions:Remember, this is my version so not exactly like the cookbook says: Heat the oven to 350 degrees finely chop the onion if you are using one put the ground beef in a medium size bowl add the garlic powder, onion, bread crumbs, milk, worcestershire sauce, salt, mustard, and pepper. Beat the egg in a measuring cup or mixing bowl and add it to the other ingredients Mix all of it together using either your hands or a big fork (Here you can add your ketchup or barbecue sauce if you want too as well) Mix it all again if you do! Put all of the mixed ingredients into your meatloaf pan (or any pan that has sides that will catch all of the juices while it bakes) I always used the flat side of the fork to make it fit nicely into the pan and then used the fork prongs to like rake streaks into my meatloaf, just liked the way it looked) Bake uncovered in the oven for 50- 60 minutes Let it stand for at least 5 minutes, top it with ketchup (or barbecue sauce) and serve! |

Notes: Of course, I can't take credit for this staple! Always use the Betty Crockers Cooking Basics cookbook for this one! But as much as "SOME" (Keegan) of my kids say they don't love it, they always come back for seconds! And Killian and Adrienne often request it! I have changed the recipe a LITTLE BIT over the years making it the way I know my family likes it best! If it's just going to be 2/3 of us, I use only 1 pound of meat! If it's more, I always make 2 lbs of meat and then I double all of the ingredients and it just makes a THICKER, BIGGER meatloaf that seems more filling! When the kids were younger and I got all the ingredients out to make this, I often made 2 or 3 meatloafs at a time, cooked one for dinner that night and then shaped the other 1 or 2 into a loaf size and put them in a ziplock bag and put them in the freezer to thaw out for dinner another night! A little meal prepping!!
