Spaghetti Meatball Cups Recipe

6 oz. spaghetti
pinch of salt
1½ tbsp. olive oil
1 egg (optional)
cooking spray
1½ c. grated parmesan cheese (divided)
1½ c. pasta sauce
12 cooked meatballs
chopped basil leaves

Directions:
Directions:
Preheat oven to 375º. Grease non-stick muffin pan with cooking spray. Cook pasta for 2 minutes less than package directions. (Cooked but firm to bite) Drain spaghetti and add olive oil. Toss in bowl until evenly coated.

(Optional) Add one beaten egg and mix well.

Refrigerate for 15 minutes.

Add 1 c. parmesan cheese and toss until evenly coated. Take handful of spaghetti and arrange in each cup. Press down to create bowl shape.

Top each with 1 tbsp. pasta sauce, 1 meatball, and another 1 tbsp. sauce. Sprinkle more parmesan cheese over tops of meatballs.

Bake 20-25 minutes. Cool before removing from tin. Sprinkle more parmesan on top with chopped basil.
