6 quarts sour cherries
7c sugar
1¾ c clear gel, NOT cornstarch
9⅓c cold water
½ c lemon juice
2 tsp almond extract, optional
¼ tsp red food coloring

Directions:
Directions:
Mix together sugar and clear gel. Add water and boil until thick. Add lemon juice and boil one minute. Add cherries. Heat thru. Put into jars. Water bath for 25-30 minutes.
