3 T table salt, divided
2 T sugar
2 lbs shell on 16-20 per pound shrimp peeled and deveined, tails left on
8 c ice

Directions:
Directions:
Dissolve 2 T salt and sugar in 1 qt cold (65 to 70 º) water in lg Dutch oven. Submerge shrimp in brine for 15 min.
Meanwhile combine ice and 1 qt water in lg bowl and set aside.
Add additional 1 qt cold water and remaining 1 T salt to Dutch oven and gently stir until salt dissolves. Set pot over med heat and cook, stir freq. until water registers 160 degrees and shrimp are firm and have turned pink, about 12 min.
Using spider skimmer or slotted spoon immediately transfer shrimp to prepared ice bath and let cool completely about 10 min. Drain and transfer to bowl. Cover and refrigerate until ready to use.
Serve with cocktail sauce or remoulade ro chermoula
