2-3 cans beans (black, great northern, pinto, kidney, navy - whatever you like, but mix it up)
4 -5 links sausage (chorizo, andouille, louisiana hot - whatever you have on hand) OR
equivalent amount of ground sausage
1 onion, diced
1 green pepper, diced (any variety - choose your own level of hot)
2-3 stalks celery, diced
2 carrots, diced
2-3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
2 cups vegetable or chicken stock
2 teaspoons cumin
1 teaspoon tumeric
Optional for toppings: cilantro, sour cream, lime wedges

Directions:
Directions:
Brown sausage in large saucepan, drain fat if necessary.
Add onion, pepper, carrots, celery and cook until softened (5-7 minutes).
Add garlic and cook 1 minute more.
Add tomatoes, stock, cumin, tumeric and beans.
Simmer for 30 minutes, uncovered.
Top each serving with chopped cilantro and sour cream if desired.
Serve with French bread and a salad and call it dinner!

While the recipe calls for simmering for 30 minutes, I always prefer to cover and put on the lowest setting for about an hour.
