Make pie dough in advance.

Filling: makes 2 pies. Cut ingredients in half for 1 pie.

1 1/2 cups granulated sugar,
1 teaspoon salt,
2 teaspoons ground cinnamon,
1 t. pumpkin pie spice,
4 large eggs,
1 large can Libbys 100% pumpkin,
2 cans evaporated milk.

Mix all the ingredients in the bowl. Taste test and add more cinnamon if needed. Pour into pie shells. Bake at 425° for 15 minutes. Reduce temperature to 350 and bake for 40 to 50 additional minutes. insert knife near the center of the pie and if it comes out clean, it is done. Cool on wire rack for two hours. Serve immediately or refrigerate.
