Ingredients:

1/8 cup Olive Oil
3-4 Large Zucchini
1/8 Tsp Pepper
1/4 Tsp Salt
1 can of Roasted Diced Tomatoes or Fresh Diced Tomatoes (16 to 24 oz)
1/2 Tbsp Minced Onions
1 Tsp Garlic Powder
Basil - For Garnish

Directions:
Directions:
Cut the Zucchini into thin Slices
Heat the Olive Oil in a Skillet on Medium Heat
Add in Zucchini Slices and Tomatoes, drain the tomatoes if using canned
Stir Regularly if using Fresh Tomatoes so they don't cook onto pan
Add Salt, Pepper, Minced Onions, and Garlic Powder
Cook until Zucchini is translucent and flimsy
Garnish with Basil, if desired
