3 lbs. boneless beef chuck or arm roast
6 russet potatoes peeled and quartered
2 ribs celery cut into 2 inch pieces
4 carrots peeled and cut into 2 inch pieces
1/2 cup water
1 envelope Lipton onion, or beefy onion soup mix

Directions:

Arrange beef, potatoes and vegetable in the slow cooker. Combine remaining ingredients and pour over beef.
Cook covered on LOW for 8-10 hours.

If there are any leftovers, (which there usually are not with all the hungry men in our family), cut the meat and vegetables into bite sized pieces and make Home Made vegetable soup!
Add a can of tomatoes juice, a half head of cabbage, salt and pepper and maybe a Bay leaf and cook until desired consistency. Slow cooking on the stove only improves the flavor.
