4-5 pound pork butt
Harissa paste
2 tablespoonsTomato paste
1-2 tablespoons Olive oil
1/2 cupWhite wine
4 tablespoonsKetchup
2 table spoonsTamari
1 table spoon vinegar, prefer Korean
Salt to taste
2 cups Chicken stock

Directions:
Directions:
Preheat oven to 300º
Mix about 4 tablespoons Harissa paste with 1-2 tablespoons olive oil and 2 teaspoons salt and rub over entire pork butt
Place butt in Dutch oven
Mix remaining ingredients and pour in pan
Place covered pot in oven for 4-6 hours till meat is very tender
Remove meat and shred in separate bowl
Taste and season remaining broth, you may want to remove some of the rendered fat. You may also need to add some broth to achieve enough to cover the shredded pork but you want he sauce to have real flavor so you may also want to reduce it to concentrate the flavor

I like to serve this with a corn tortilla that is quick fried in some oil and then dipped in the sauce and top with guacamole, pickled red onion, and some crumbled queso fresco
