2 (15 oz) cans black beans, drained and rinsed
1 (15 oz) can whole kernel corn (not creamed) drained
Crumbled feta cheese (1 package)
1 bunch cilantro washed and chopped
Optional:
chopped scallions

Dressing:
1/4th cup cider vinegar
1/4 cup sugar
1/4th cup olive oil

Directions:
Directions:
Mix drained and rinsed beans with drained corn. Add chopped cilantro (add amount desired to taste. You do not have to add entire bunch). Add chopped scallions if desired. Mix dressing and stir. Pour dressing over bean corn mixture. Add desired amount of feta which may not be entire package. Stir all ingredients, cover and refrigerate for an hour or up to a day. Remove from refrigerator and stir before serving. Can be served at room temperature.

Serve with sturdy corn chips!
